The Caninese cultivar is the queen variety of our territory.The Monocultivar Caninese is an olive oil produced exclusively from centuries-old Caninese trees; its availability is limited.
The olives are harvested before the beginning of October. The resulting oil lives up to the reputation of the Caninese variety: it is well-balanced, with notes of both bitterness and pungency, and contains a high level of polyphenols—compounds with strong antioxidant properties that are essential both for preserving the oil and for human health.
